Aloo Gobi: Spiced Potato and Cauliflower Stir-Fry

  1. Aloo Gobi is a classic vegetarian dish that brings together potatoes and cauliflower in a flavorful blend of spices. This quick and easy stir-fry is packed with aromatic spices and is perfect as a side dish or a light main course.

Ingredients:

  • 2 medium-sized potatoes, peeled and cubed
  • 1 small cauliflower, cut into florets
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit lengthwise
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Oil for cooking

Instructions:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and green chilies. Sauté until the onions turn translucent.
  3. Add turmeric powder, red chili powder, and coriander powder. Mix well.
  4. Add chopped tomatoes and cook until they soften and the oil separates from the masala.
  5. Add the cubed potatoes and cauliflower florets. Mix gently to coat them with the masala.
  6. Cover the pan and cook on low heat, stirring occasionally, until the potatoes and cauliflower are tender.
  7. Sprinkle garam masala and salt. Mix well and cook for another 2-3 minutes.
  8. Garnish with fresh coriander leaves.
  9. Serve hot with roti or rice.
